  • 4 pounds pork shoulder Best cut for juiciness
  • 1/4 cup soy sauce Recommended: Kikkoman
  • 1/4 cup hoisin sauce Secret sweet element
  • 1/4 cup rice vinegar Adds the right tang
  • 3 cloves garlic, minced Use 5 for extra flavor
  • 1 inch piece ginger, grated Adds magic
  • 1 tablespoon sesame oil For nutty flavor
  • 1 tablespoon brown sugar Optional extra for sweeter days

Method
 

Preparation
  1. Trim excess fat from the pork shoulder and cut it into large chunks.
  2. In a bowl, whisk together soy sauce, hoisin sauce, rice vinegar, garlic, ginger, sesame oil, and brown sugar until well combined.
Cooking
  1. Place the pork chunks in the slow cooker, pour the sauce over, and mix to coat the meat.
  2. Cover the slow cooker and set it on low for 8 hours or high for 4 hours.
