  • 300 g Italian sausage, casings removed Spicy or mild according to preference.
  • 250 g penne pasta Opt for a high-quality brand for best results.
  • 1 large onion, diced Use smaller if you prefer less onion.
  • 3 cloves garlic, minced Adjust amount based on personal preference.
  • 400 g can of chopped tomatoes Choose a brand with fewer additives.
  • 2 tsp fresh thyme Or 1 tsp dried as a substitute.
  • 1 tsp smoked paprika Adds a smoky flavor to the dish.
  • to taste Salt and pepper Essential for seasoning.
  • optional grated Parmesan cheese for topping Enhances the richness of the dish.

Method
 

Prepare the Squash
  1. Peel, seed, and cut the squash into cubes.
Brown the Sausage
  1. In a large pot or Dutch oven, add the sausage and cook over medium heat until browned.
Add Onions and Garlic
  1. Add the diced onion and minced garlic to the pot. Cook until the onions become translucent.
Combine with Tomatoes and Squash
  1. Stir in the chopped tomatoes and squash, along with the thyme and smoked paprika. Let it simmer for about 15-20 minutes.
Cook the Pasta
  1. When the squash is tender, toss in the cooked pasta and stir until it’s combined.
