  • 1 cup crème fraîche Use the yogurt version for a healthier option.
  • 100 g grated Gruyère cheese Buy the block and grate it yourself for better flavor.
  • 1 cup spinach, chopped If kids see it, call it 'green fluff'.
  • Salt and pepper, to taste Go heavy on the pepper for added flavor.
  • 2 tsp Dijon mustard Adds fabulous flavor.
  • Butter for greasing Kerry Gold is recommended for its rich flavor.

Method
 

Preparation
  1. Preheat your oven to 180°C (350°F). This ensures the eggs cook evenly.
  2. Grease your baking dish generously with butter to prevent sticking.
  3. In a bowl, whisk together the eggs, crème fraîche, Dijon mustard, salt, and pepper until combined.
  4. Gently fold in the chopped spinach and half of the grated Gruyère cheese.
Baking
  1. Pour the egg mixture into the greased dish and sprinkle with the remaining Gruyère cheese.
  2. Bake in the preheated oven for about 30 minutes, or until the top is golden and bubbly.
