Ingredients
  

For the Salmon Bites
  • 500 g salmon fillets, skin removed Opt for sustainably sourced salmon.
  • ½ cup panko breadcrumbs Add incredible crunch; cheaper at international markets.
  • 1 tsp garlic powder Garlic enhances the flavor.
  • 1 tsp smoked paprika Adds a smoky kick.
  • 1 large egg, beaten Free-range is preferred but any will work.
  • ½ cup mayonnaise Hellmann's is recommended.
  • 2 tbsp sweet chilli sauce Enhances the flavor significantly.
  • Juice of half a lime Adds refreshing zing.
  • Salt and pepper to taste Essential for seasoning.
  • Optional: chopped spring onions for garnish Adds a fancy touch.

Method
 

Preheat the Oven
  1. Preheat your oven to 200°C (or 400°F).
  2. This ensures even cooking and avoids undercooked salmon.
Prep the Salmon
  1. Chop your salmon fillets into bite-sized pieces.
  2. Using kitchen scissors can save time and effort.
Coat the Bites
  1. In a bowl, mix the panko, garlic powder, smoked paprika, and a pinch of salt and pepper.
  2. In another bowl, beat the egg.
  3. Coat each salmon piece thoroughly with the breadcrumb mix.
Bake it Like You Mean It
  1. Dip each salmon piece into the egg, then coat with the breadcrumb mix.
  2. Place on a non-stick baking tray.
Bake for 15-20 Minutes
  1. Bake the salmon bites until golden and crispy.
  2. Prepare your Bang Bang sauce while baking.
Make the Bang Bang Sauce
  1. Combine mayonnaise, sweet chilli sauce, and lime juice in a bowl.
  2. Taste-test and adjust flavors as desired.
