  • 2 cloves garlic, minced Use more if you love garlic.
  • 2 tsp smoked paprika Adds a nice smoky flavor.
  • 1 tsp cumin Brings earthy tones to the dish.
  • 1 tsp salt Sea salt is recommended for extra crunch.
  • 1/2 tsp black pepper Add more if desired.
  • 2 tbsp olive oil for frying Avoid using cooking spray for better results.
  • to taste chopped cilantro, for garnish Optional; add only if you enjoy cilantro.

Preparation
  1. Boil the Sweet Potatoes: Bring a pot of salted water to a boil, add diced sweet potatoes, and cook until tender (15-20 minutes).
  2. Sauté the Vegetables: Heat olive oil in a pan over medium heat, add diced onion and garlic, and sauté until translucent (5-7 minutes).
  3. Combine Everything: Add black beans, corn, smoked paprika, cumin, salt, and pepper to the sautéed vegetables and cook for an additional 5 minutes.
  4. Mash the Sweet Potatoes: Drain sweet potatoes, return them to the pot, and mash until smooth. Optionally, add butter or cream.
  5. Layer It Up: In a casserole dish, layer the black bean filling, followed by the sweet potato mash on top.
  6. Bake: Preheat oven to 180°C (350°F) and bake for 25-30 minutes until bubbly and slightly browned.
