  • 1 medium spaghetti squash Choose a firm one for best results.
  • 1 pack Boursin cheese, garlic & herb flavour Look for creamy magic in a box.
  • 2 cloves garlic, minced Feel free to use three cloves if you love garlic.
  • 1 tablespoon olive oil Use a good quality brand for the best flavor.
  • to taste salt and freshly cracked black pepper Boursin is salty, so go easy on the salt.
  • for garnish fresh parsley Or any green herb you have.

Method
 

Preparation
  1. Preheat your oven to 200°C (400°F). Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  2. Drizzle a bit of olive oil on the cut sides before roasting.
  3. Bake for 35-40 minutes until tender; a fork should easily pierce the flesh.
Garlic Delight
  1. While the squash is baking, heat the olive oil over medium heat in a small pan and add the minced garlic.
  2. Stir constantly to avoid burning the garlic.
Combining Ingredients
  1. Once the squash is ready, use a fork to fluff up the insides to create spaghetti-like strands.
  2. Mix in the softened Boursin and garlicky oil while everything is still hot.
Final Touches
  1. Check for seasoning and add salt and pepper to taste.
  2. Transfer to a serving bowl and enjoy.

Notes

If you burn the garlic, quickly add a splash of water to the pan and scrape off the burnt bits. If you’re out of Boursin, you can substitute with cream cheese or ricotta mixed with herbs for a different but tasty result.
