Ingredients
  

Main Ingredients
  • 4 medium potatoes, diced Yukon Gold preferred for creaminess
  • 1 medium onion, chopped Yellow onion for sweetness
  • 2 cloves garlic, minced Add more if desired
  • 4 cups vegetable broth Homemade or store-bought
  • 1 cup milk Use whole milk or alternative for creaminess
  • 1 cup frozen corn Fresh corn can be used instead
  • 1 teaspoon Cajun seasoning Adjust to taste
  • to taste Salt and pepper Always taste as you go
  • Chopped green onions for garnish Optional

Method
 

Preparation
  1. Dice your potatoes into bite-sized pieces.
  2. Soak diced potatoes in cold water while prepping the other ingredients.
  3. In a skillet, lightly sauté the onions and garlic in a bit of oil until fragrant.
Cooking
  1. Add the sautéed onions and garlic to the slow cooker with the diced potatoes, corn, broth, milk, and Cajun seasoning.
  2. Set your slow cooker on low for 6-8 hours or high for 3-4 hours.
Serving
  1. Before serving, use an immersion blender to puree some of the soup for a creamier texture.
  2. Serve in big, rustic bowls, preferably with a crusty loaf of bread.

Notes
