Ingredients
  

For the chicken filling
  • 500 g chicken breast (diced) Use whatever’s on sale.
  • 1 tsp sea salt Maldon salt preferred for a fancy touch.
  • 2 cloves garlic, minced Or 4 if you're fighting off a cold.
  • 1 tbsp dried oregano Fresh is better if you have it.
  • 100 g cherry tomatoes, halved For color and presentation.
For assembly
  • 1 batch homemade or store-bought focaccia Store-bought is okay.
  • 200 g mozzarella, sliced Or stretchy cheese like fontina.
  • Fresh basil leaves Adds flavor and presentation.
  • Olive oil to taste for drizzling Use a good-quality brand.

Method
 

Preparation
  1. Heat a splash of olive oil in a pan over medium heat. Add the diced chicken and season with sea salt and garlic.
  2. Once the chicken is mostly cooked, toss in the dried oregano and cherry tomatoes, mixing well to combine. Cook until the chicken is cooked through and the tomatoes are warmed.
Assembly
  1. Cut your focaccia in half horizontally. Slather the bottom with olive oil.
  2. Layer the chicken mixture onto the bottom half of the focaccia, then lay the mozzarella slices over the top. Put the lid on the focaccia and press down gently.
Baking
  1. Preheat your oven to 200 degrees Celsius and pop the focaccia sandwich in on a baking tray. Bake for about 15-20 minutes, or until golden brown and melty.
Serving
  1. Remove from the oven, slice it into hefty wedges, and serve with fresh basil as a garnish.

Notes
