  • 1 lb ground chicken Lean ground chicken is recommended.
  • 1 cup ricotta cheese Cottage cheese can be used as a substitute if blended.
  • 1/2 cup breadcrumbs Use stale breadcrumbs for best results.
  • 1/4 cup grated Parmesan cheese Use real Parmesan for better flavor.
  • 1 tbsp minced garlic Minced garlic is preferred over whole cloves.
  • 1 ea egg Free-range eggs are suggested for better taste.
  • 1 tsp oregano Adds flavor to the meatballs.
  • to taste salt and pepper
Sauce and Garnish
  • 2 cups Alfredo sauce Pesto brand is recommended for its rich flavor.
  • to taste fresh parsley Optional for garnish.

Method
 

Preparation
  1. In a large bowl, combine the ground chicken, ricotta, breadcrumbs, Parmesan, garlic, egg, oregano, salt, and pepper.
  2. Mix everything well using your hands to ensure an even blend.
Shaping Meatballs
  1. Form the mixture into meatballs about the size of golf balls.
Browning Meatballs
  1. Heat a non-stick skillet over medium heat, add a splash of olive oil, and brown the meatballs for 5-7 minutes. Do this in batches if needed.
Cooking in Sauce
  1. Reduce heat and pour in the Alfredo sauce, spooning it over the meatballs. Cover and let it simmer for about 10-15 minutes.
Serving
  1. Garnish with fresh parsley if desired and serve with some of the sauce over the meatballs.
