  • 1/3 cup melted coconut oil A quick alternative to butter.
  • 1/4 cup honey or maple syrup Maple syrup is fancier, but honey is basic.
  • 1 teaspoon vanilla extract Always Bon Maman.
Dry Ingredients
  • 1 cup wholewheat flour Hearty, prevents falling apart.
  • 1/2 cup cocoa powder Unsweetened, avoid overpriced brands.
  • 1 teaspoon baking powder Essential for a fluffy loaf.
  • 1/2 teaspoon baking soda Double-check this to avoid confusion.
  • 1/4 teaspoon salt Balances the sweetness.
Add-ins
  • 1 cup dark chocolate chips or nuts Opt for dark chocolate for a healthier choice.

Method
 

Preparation
  1. Preheat your oven to 175°C (350°F) and grease a loaf pan or line it with baking paper.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the eggs, melted coconut oil, honey, and vanilla extract into the bowl with the mashed bananas. Mix until well blended.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  5. Slowly stir the dry ingredients into the wet mixture until just combined, then fold in your chocolate chips or nuts.
  6. Pour the mixture into your prepared loaf pan and pop it into the oven.
Baking
  1. Bake for 50-60 minutes. Check for doneness by aroma and texture.
  2. If the top is burning, cover it loosely with foil.
