Ingredients
  

For the crepes
  • 1 cup all-purpose flour I use the cheap stuff from Tesco.
  • 1.5 cups milk Any milk works—dairy, almond, oat.
  • 2 large eggs The fresher, the better.
  • 2 tbsp sugar Even if you don’t like sweet, the batter needs this.
  • 1 tsp vanilla extract You can skip this, but I like to channel my inner pastry chef.
  • 1 pinch salt A crucial step to balance the sweetness.
For the ganache
  • 1 cup dark chocolate chips Good quality chocolate is recommended.
  • 0.5 cup heavy cream Perfect for a luxurious ganache.
Optional toppings
  • whipped cream, fresh strawberries, nuts Whatever floats your boat.

Method
 

Make Your Batter
  1. In a mixing bowl, combine the flour, eggs, milk, sugar, vanilla, and salt. Whisk until smooth.
Heat Your Pan
  1. Heat your non-stick pan over medium heat and add a dollop of butter.
Pour the Batter
  1. Pour about ½ cup of batter into the pan, swirling to coat the bottom evenly.
Cook And Flip
  1. Cook for about 1-2 minutes until the edges start to lift, then flip it with a spatula.
Make the Ganache
  1. Heat the heavy cream in a small pan until just steaming, then pour it over the chocolate chips in a bowl. Let it sit for a minute, then stir until melted and smooth.

Notes
