Ingredients

Filling ingredients
  • 2 cups crab meat, shredded Use canned crab meat for affordability.
  • 1 cup shrimp, cooked and chopped Can substitute with lobster if preferred.
  • 1 cup cream cheese, softened Essential for the creamy texture.
  • 1 cup shredded cheddar cheese Mix of sharp and mild cheddar recommended.
  • ½ cup diced green onions Spring onions are a good alternative.
  • 1 cup salsa Mild salsa is preferred for lower spice tolerance.
  • 8 large flour tortillas Can use fewer for smaller portions.
  • to taste cooking oil for frying Avoid cheap oils; sunflower oil is suggested.
  • to taste hot sauce Optional for added spice.

Method

Prepare the Filling
  1. In a mixing bowl, combine the crab meat, shrimp, cream cheese, cheddar, green onions, and salsa until well mixed.
Roll It Up
  1. Lay out a tortilla and scoop about a generous quarter cup of the crab mixture onto the centre. Roll the tortilla tightly, tucking in the sides to seal.
Fry to Perfection
  1. In a large non-stick pan, heat about ½ inch of cooking oil over medium heat. Once hot, add the rolled tortillas seam side down.
Drain and Cool
  1. Once crispy on both sides, remove from the oil and let them drain on some kitchen paper.
