Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, mash the ripe bananas until smooth.
- Mix in the sugar, melted butter, egg, and vanilla until well combined.
- Stir in the flour, baking soda, and salt until just combined.
- In a separate bowl, beat the softened cream cheese until creamy.
- Gently fold the banana batter into your cream cheese mixture until just combined.
- Spoon the batter into well-greased muffin tins, filling each cup about 2/3 full.
Baking
- Pop them into the oven for about 18-20 minutes or until a toothpick inserted comes out clean.
- Cool in the pans for 5 minutes before transferring them to a wire rack.
