Preparation
- Slice your avocado in half and scoop it into a bowl. Add a pinch of salt and pepper, and mash it gently with a fork.
- Spread a generous amount of butter (or olive oil) on one side of each slice of bread.
- Place one slice of bread, buttered side down, in the frying pan. Layer it with mashed avocado, cheese, and fresh spinach—then top it with the other slice of bread (buttered side up).
Cooking
- Cook on medium heat for about 3-4 minutes or until golden brown before flipping.
- Flip the sandwich carefully and cook on the other side until the cheese melts, about another 3-4 minutes.

Notes
If you burn the bottom, reduce heat and try again. Use mozzarella or vegan cheese if out of cheddar. Leftover sandwiches taste better the next day.
