Ingredients
  

For the sandwich
  • 2 slices sourdough bread Feel free to use that leftover crusty bread from last week's baguette binge.
  • 1 ripe avocado The kind that feels slightly soft when you gently squeeze it.
  • 2 slices sharp cheddar cheese Use good quality cheese for the best flavor.
  • 1 tbsp butter Can substitute with a dash of olive oil.
  • salt and pepper To taste, for seasoning the avocado.
  • 1 handful fresh spinach Optional, for some extra nutrients.

Method
 

Preparation
  1. Slice your avocado in half and scoop it into a bowl. Add a pinch of salt and pepper, and mash it gently with a fork.
  2. Spread a generous amount of butter (or olive oil) on one side of each slice of bread.
  3. Place one slice of bread, buttered side down, in the frying pan. Layer it with mashed avocado, cheese, and fresh spinach—then top it with the other slice of bread (buttered side up).
Cooking
  1. Cook on medium heat for about 3-4 minutes or until golden brown before flipping.
  2. Flip the sandwich carefully and cook on the other side until the cheese melts, about another 3-4 minutes.

Notes

If you burn the bottom, reduce heat and try again. Use mozzarella or vegan cheese if out of cheddar. Leftover sandwiches taste better the next day.
