Ingredients
  

Pasta and Base Ingredients
  • 250 g pasta (fusilli or any shape) Wholegrain can be used for a healthier option.
  • 200 ml unsweetened almond milk Regular milk works too.
  • 3 tbsp tahini A versatile ingredient.
  • 2 tbsp lemon juice Adds a refreshing zing.
  • 1 clove garlic, minced Essential for flavor.
  • Salt and pepper To taste.
Vegetables
  • 1 cup cherry tomatoes, halved Use ripe ones for best flavor.
  • 1 cup chopped cucumber Slice like little half moons.
  • 1 bell pepper, diced Any color you prefer.
  • 1/2 cup olives, sliced Black or green.
Herbs and Flavorings
  • Fresh herbs (like basil) Use your favorite herbs.

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil, then add the pasta and cook according to package directions, usually about 8-12 minutes.
Make the Dressing
  1. In a bowl, whisk together the almond milk, tahini, lemon juice, and minced garlic.
Combine Everything
  1. Drain the pasta and rinse it briefly under cold water, then toss the pasta in a bowl and mix in the dressing, tomatoes, cucumber, bell pepper, olives, and herbs.
Season and Serve
  1. Taste the salad and adjust salt, pepper, or lemon juice as needed before serving.
Chill and Enjoy
  1. Sprinkle on fresh herbs and let the salad chill in the fridge for at least an hour for the flavors to meld.
