  • 2 pieces bell peppers, sliced Mix colors; red and yellow create a cheerful look.
  • 3 cloves garlic, minced Add more if desired for flavor.
  • 1 tsp cumin Essential for adding warmth.
  • 1 tsp paprika Smoked paprika recommended for an extra kick.
  • 1 tsp salt Sea salt preferred for flavor.
  • 1 tsp black pepper Freshly ground is best.
  • 1 piece jalapeño, diced (optional) Add for a spicy kick.
  • 2 pieces limes, juiced Fresh juice makes all the difference.
  • Tortillas for serving whole wheat or white Use your preference.
Optional Toppings

Method
 

Preparation
  1. Slice the onions and bell peppers, and mince the garlic.
Layer Ingredients
  1. Layer the chopped vegetables at the bottom of the crockpot, followed by the chicken breasts on top.
Add Seasoning
  1. Sprinkle the cumin, paprika, salt, and pepper over the top, then add the minced garlic. Squeeze the lime juice over everything.
Set the Crockpot
  1. Cook on low for 6 to 8 hours or high for 3 to 4 hours.
Shred the Chicken
  1. Once cooked, shred the chicken right in the pot with two forks, mixing everything together.
