  • 1 teaspoon baking soda Secret for lovely rise.
  • 1 teaspoon baking powder Essential for texture.
  • 1/2 teaspoon salt Sea salt preferred.
  • 1/2 cup granulated sugar Balances the tanginess.
Wet Ingredients
  • 1 cup shredded pickles Shredded for optimal flavor.
  • 1/2 cup dill pickle juice The binding liquid.
  • 1/2 cup buttermilk Can be substituted with yogurt and vinegar.
  • 1/4 cup vegetable oil Olive oil can also be used, but alters taste.
  • 1 large egg Provides binding.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, baking soda, baking powder, salt, and sugar until well combined.
  3. In another bowl, combine the shredded pickles, pickle juice, buttermilk, vegetable oil, and egg. Stir well.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Pour the batter into a greased loaf pan.
Baking
  1. Bake for 45-50 minutes, or until a toothpick comes out clean and the top is golden.
