Main ingredients
  • 350 g fusilli pasta I use Tesco value pasta because it’s cheap, and it works a charm.
  • 2 pieces chicken breasts, cooked and diced Sometimes I use leftovers; who doesn’t love a meal that repurposes?
  • 100 g romaine lettuce, chopped I always feel fancy when I add this – and it adds that crunch!
  • 50 g grated Parmesan cheese A heavenly sprinkle that says “I love you” to your taste buds.
  • 100 ml Caesar dressing I usually go for the classic Annie’s dressing; it’s got the right tang.
  • to taste Salt and pepper It’s basically the magic duo, isn’t it?

Method
 

Preparation
  1. Bring a large pot of salted water to a boil. Add the fusilli and cook according to package instructions.
  2. While the pasta cooks, chop your cooked chicken into bite-sized pieces.
  3. In a bowl, whisk together the Caesar dressing, and if you’re feeling adventurous, add a squeeze of lemon for brightness.
  4. Once the pasta is cooked, drain it and rinse it under cold water to stop the cooking process. In a large mixing bowl, combine the pasta, chicken, lettuce, and dressing.
  5. Toss in the grated Parmesan and give it a final gentle mix.
