  • 1 tablespoon olive oil Use high-quality olive oil for the best flavor.
  • 1 medium onion, diced Yellow onion preferred.
  • 2 cloves garlic, minced Use 4 cloves if desiring extra flavor.
  • 2 medium carrots, sliced Adds color to the soup.
  • 1 medium potato, diced Use any leftover potatoes available.
  • 1 medium zucchini, diced Softens beautifully when cooked.
  • 1 medium bell pepper, chopped Any color works.
Broth and Seasoning
  • 6 cups vegetable or chicken broth Homemade is preferred but store-bought is fine.
  • 1 teaspoon dried oregano Essential for authentic Greek flavor.
  • to taste salt and pepper Season to your preference.
Finishing Touches
  • 1 medium lemon, juiced Don’t skip the zest for extra flavor.
  • to taste chopped fresh parsley For garnish.

Method
 

Preparation
  1. Heat the olive oil in a heavy-bottomed pot over medium heat.
  2. Add diced onions and cook until translucent, about 5 minutes.
  3. Toss in the garlic, carrots, potato, and zucchini, stirring for another 5 minutes.
  4. Pour in the vegetable or chicken broth, followed by oregano, salt, and pepper.
  5. Bring to a simmer and let it cook for about 30 minutes.
  6. Finish off with lemon juice and adjust seasoning as needed.
