Main Ingredients
  • 500 g ground chicken Pick quality chicken like Tesco’s best.
  • 2 medium zucchinis, grated Use long, skinny zucchinis for less water.
  • 1 cup breadcrumbs Panko for extra crunch.
  • 1 egg Can use flaxseed meal as an egg replacement.
  • 2 cloves garlic, minced Adjust amount to taste.
  • 1 tsp salt Himalayan salt is my go-to.
  • 1 tsp black pepper White pepper is also an option.
  • 1 tsp dried oregano Kids think it tastes like pizza!
  • Optional Parmesan cheese Add more according to taste.

Method
 

Preparation
  1. Grate the zucchinis into a clean tea towel and squeeze out excess moisture over the sink.
  2. In a large bowl, combine the ground chicken, grated zucchini, breadcrumbs, egg, minced garlic, salt, pepper, and oregano. Mix until fully combined.
  3. Line a baking tray with parchment paper, then scoop about 2 tablespoons of the mixture and shape into bite-sized balls or discs.
  4. Preheat your oven to 200°C (or 400°F) and place the shaped poppers on the lined tray. Bake for about 20-25 minutes or until they’re golden brown.
  5. Remove from the oven and let cool for a few minutes before serving.
