- Grate the zucchinis into a clean tea towel and squeeze out excess moisture over the sink.
- In a large bowl, combine the ground chicken, grated zucchini, breadcrumbs, egg, minced garlic, salt, pepper, and oregano. Mix until fully combined.
- Line a baking tray with parchment paper, then scoop about 2 tablespoons of the mixture and shape into bite-sized balls or discs.
- Preheat your oven to 200°C (or 400°F) and place the shaped poppers on the lined tray. Bake for about 20-25 minutes or until they’re golden brown.
- Remove from the oven and let cool for a few minutes before serving.
