Dough Ingredients
  • 2 cups whole wheat flour Use budget-friendly flour if possible.
  • 1 cup Greek yogurt Thick and creamy, great for the dough.
  • 1 tsp baking powder Needed for that fluff, avoids dense hot pockets.
  • 1 tsp salt Sea salt recommended, but table salt works.
Filling Ingredients
  • 1 cup shredded mozzarella Quality cheese enhances flavor.
  • 1/2 cup chopped pepperoni Substitute with turkey pepperoni if desired.
  • 1/2 cup diced bell peppers Mix of red and green for color.
  • 1/4 cup grated Parmesan Adds a cheesy finish.
  • to taste Italian seasoning Optional, based on preference.

Method
 

Make the Dough
  1. In a bowl, combine whole wheat flour, baking powder, and salt.
Add Yogurt
  1. Mix in the Greek yogurt until combined.
Knead the Dough
  1. Dust your work surface with flour, turn the dough out, and knead for about 5 minutes.
Roll It Out
  1. Roll out the dough to about 1/4 inch thick; then cut it into squares (about 4x4 inches).
Fill ‘Em Up
  1. In a separate bowl, mix mozzarella, pepperoni, bell peppers, and Italian seasoning.
Seal and Bake
  1. Spoon a tablespoon of filling onto each square, fold, and pinch the edges to seal.
Bake
  1. Place the hot pockets on a baking sheet lined with parchment paper and bake at 400°F (200°C) for 15-20 minutes, or until golden brown.
