Method
Marinate the Chicken
- In a bowl, combine sliced chicken, honey, lime juice, salt, and pepper. Toss until chicken is coated and let it sit for about 20-30 minutes.
Cook the Rice
- Cook the rice according to package instructions using a 1:2 ratio of rice to water.
Cook the Chicken
- Heat a non-stick pan over medium heat, add a bit of oil, and cook the marinated chicken for about 5-7 minutes on each side until golden brown.
Assemble the Stack
- Layer cooked rice at the bottom of a bowl or plate, add cooked chicken on top, then diced avocado, and garnish with fresh cilantro.
Garnish and Serve
- Sprinkle additional lime juice and a pinch of salt over the stack before serving.

Notes
If out of honey, maple syrup can be used as a substitute. Leftovers are great for wraps the next day.
