Ingredients
  

For the Chicken
  • 2 pieces chicken breasts, sliced Organic is recommended for better taste
  • 1/4 cup honey Use local honey for best flavor
  • 2 pieces limes, juiced Squeeze directly into the bowl and wear an apron!
  • Salt and pepper to taste salt and pepper Maldon sea salt recommended for extra flavor
For the Rice
  • 2 cups cooked white or brown rice Prepare according to package instructions
For Assembly
  • 1 piece avocado, diced Can be eaten straight from the skin if peckish
  • Fresh cilantro for garnish fresh cilantro Optional but enhances presentation

Method
 

Marinate the Chicken
  1. In a bowl, combine sliced chicken, honey, lime juice, salt, and pepper. Toss until chicken is coated and let it sit for about 20-30 minutes.
Cook the Rice
  1. Cook the rice according to package instructions using a 1:2 ratio of rice to water.
Cook the Chicken
  1. Heat a non-stick pan over medium heat, add a bit of oil, and cook the marinated chicken for about 5-7 minutes on each side until golden brown.
Assemble the Stack
  1. Layer cooked rice at the bottom of a bowl or plate, add cooked chicken on top, then diced avocado, and garnish with fresh cilantro.
Garnish and Serve
  1. Sprinkle additional lime juice and a pinch of salt over the stack before serving.

Notes
