Preparation
- In a bowl, mix together the soy sauce, mirin, brown sugar, sesame oil, garlic, and ginger.
- Reserve a couple of tablespoons of the marinade for basting later.
Cooking
- Heat your skillet over medium-high heat.
- Add the chicken skin-side down in the hot pan. Sear for about 5 minutes.
- Flip the chicken once the skin is brown and crispy, add the reserved marinade at this stage.
- Cook for another 5-7 minutes, until the chicken is cooked through and has a golden brown finish.

Notes
Serve garnished with sliced green onions and drizzle any leftover marinade on top. Leftovers taste even better as they soak up the flavours overnight. If you burn the bottom, scrape off the burnt parts and reduce the heat.
