Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat the softened butter and granulated sugar together until light and fluffy (about 2-3 minutes).
  4. Add the egg, vanilla extract, key lime juice, and zest to the butter-sugar mixture. Beat until well combined.
  5. Gradually incorporate the dry ingredients into the wet mixture, mixing just until combined.
  6. Using a tablespoon, scoop the dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
Baking
  1. Pop the cookies in the preheated oven for about 10-12 minutes or until the edges are lightly golden brown.
  2. Remove the cookies from the oven and let them cool on the baking sheet for about 5 minutes before transferring to a wire rack.
