Method
Preheat Your Oven
- Preheat your broiler to 400°F (or around 200°C).
Slice Your Zucchini
- Slice the zucchinis into thin rounds, about half a centimetre thick.
Prepare the Ricotta Mix
- In a bowl, mix the ricotta, minced garlic, salt, and pepper until well combined.
Layer it Up
- Spread some marinara sauce on the bottom of a large baking dish, then layer half the zucchini slices, followed by half the ricotta mixture, and another layer of marinara.
Repeat the Layers
- Repeat the layering process until you run out of zucchini and ricotta, finishing with a layer of marinara on top.
Top with Cheese and Bake
- Generously sprinkle the shredded mozzarella on top and pop it in the oven.
Enjoy the Melty Goodness
- After 20-25 minutes, check if the cheese is bubbly and golden.

Notes
If you’re short on ricotta, cream cheese mixed with a splash of milk can work. Always check the broiler before starting, it makes the recipe easier. Leftovers taste even better!
