Ingredients
  

For the Chicken
  • 2 pieces chicken breasts, boneless and skinless You can use thighs for more flavor.
  • 1 cup shredded cheese Cheddar is preferred, but mozzarella also works.
  • 1/2 cup mayonnaise Gives it that creamy lift.
  • 1 tsp garlic powder Or fresh garlic if preferred.
  • 1/4 cup chopped green onions Chopped fine for picky eaters.
  • 1 pinch salt Sea salt is a good choice.
  • 1 pinch pepper
  • 4 slices bread Sourdough gives a fancy touch.
  • to taste none butter For grilling.

Method
 

Preparing the Chicken
  1. Heat a little olive oil in a pan over medium heat.
  2. Season your chicken breasts with salt and pepper.
Cooking the Chicken
  1. Add the chicken to the heated pan and cook for about 6-7 minutes per side until golden brown and fully cooked.
Mixing the Filling
  1. While the chicken cools, mix mayonnaise, cheese, garlic powder, and green onions in a bowl until combined.
Shredding the Chicken
  1. Once cooled, shred the chicken into bite-sized pieces and fold it into the cheesy mayo mixture.
Assembling the Sandwiches
  1. Preheat the grill or frying pan and spread butter on one side of all four slices of bread.
  2. Put a generous scoop of the chicken mixture on one slice, top with another slice, butter-side-up.
Grilling the Sandwiches
  1. Grill each sandwich for about 3-4 minutes per side until golden brown and crisp.
Serving it Up
  1. Slice the sandwiches in half and serve with chips or a side salad.

Notes

If you burn the bottom, you can peel off the charred bits. If you run out of chicken, canned tuna works as a substitute.
