Preparation
- In a large pan, heat a splash of olive oil over medium heat.
- Toss the diced chicken into the pan and cook until nicely browned.
- Add the diced onion and minced garlic to the pan and sauté for 2-3 minutes.
- Stir in the diced bell pepper and sprinkle over the Italian seasoning. Mix until coated.
- Pour in the BBQ sauce and honey, scraping the bottom of the pan to incorporate caramelized bits.
- Add penne pasta and two cups of water to the pan, stir well, cover, and let it simmer for about 12 minutes, or until the pasta is al dente.
- Check for doneness at the 10-minute mark; if the pasta is getting too soft, remove from heat.
- Once done, remove the pan from heat and let it sit for a couple of minutes before serving.
