  • 2 pieces chicken breasts, diced Any cut works; just adjust cooking time.
  • 250 grams penne pasta Al dente is preferred for better sauce absorption.
  • 1 cup BBQ sauce Heinz is recommended for its smoky sweetness.
  • 2 tablespoons honey Clover honey is divine, but use what you have.
  • 1 piece onion, diced Yellow onions are cheaper; red adds variety.
  • 3 cloves garlic, minced Use more for a bolder flavor.
  • 1 piece bell pepper, diced Choose any color; they're all beautiful!
  • to taste Italian seasoning Enhances flavor beyond just pizza.
  • to taste salt and pepper Sea salt recommended for a posher feel.
  • to taste red pepper flakes Optional; add for extra spice if desired.

Method
 

Preparation
  1. In a large pan, heat a splash of olive oil over medium heat.
  2. Toss the diced chicken into the pan and cook until nicely browned.
  3. Add the diced onion and minced garlic to the pan and sauté for 2-3 minutes.
  4. Stir in the diced bell pepper and sprinkle over the Italian seasoning. Mix until coated.
  5. Pour in the BBQ sauce and honey, scraping the bottom of the pan to incorporate caramelized bits.
  6. Add penne pasta and two cups of water to the pan, stir well, cover, and let it simmer for about 12 minutes, or until the pasta is al dente.
  7. Check for doneness at the 10-minute mark; if the pasta is getting too soft, remove from heat.
  8. Once done, remove the pan from heat and let it sit for a couple of minutes before serving.
