Preparation
  1. Slice off the top and bottom of the pineapple, peel the skin, and remove the 'eyes'. Chop into bite-sized chunks.
Combine Ingredients
  1. In a large pot, combine the sugar, apple cider vinegar, red pepper flakes, chili powder, and salt. Stir until the sugar dissolves.
Add Pineapple
  1. Add the pineapple chunks to the syrup, ensuring they are fully covered.
Simmer
  1. Bring the mixture to a gentle simmer, then reduce the heat and let it bubble for 10-15 minutes until the pineapple softens and the syrup thickens slightly.
Adjust for Heat

Jar It Up
  1. Remove from heat and allow to cool slightly. Spoon the pineapple and syrup into sterilized jars.
