Preparation
- Preheat your oven to 200°C (400°F).
- In a pot, bring water to a boil and add cubed sweet potatoes. Cook until tender, about 15-20 minutes.
- In a bowl, combine pork, onion, garlic, salt, pepper, thyme, egg, and breadcrumbs. Mix gently until incorporated.
- Shape the mixture into 24 meatballs and place them on a baking sheet lined with parchment paper.
- Bake for 25 minutes or until golden brown.
Sauce Preparation
- In a saucepan, combine bourbon, maple syrup, and soy sauce. Simmer over medium heat, whisking for 5-7 minutes until slightly thickened.
Finishing Touches
- Drain sweet potatoes, return to pot, add butter, salt, and pepper, then mash until smooth and creamy.
- Once meatballs are done, toss them in the bourbon-maple sauce to coat.

Notes
