  • 1 tsp baking powder This ingredient adds lightness.
  • 1 tsp sea salt Enhances the sweetness.
Mix-ins
  • ¾ cup shelled pistachios, chopped Adds a salty, nutty flavor.
  • to taste flaky sea salt for sprinkling Adjust based on nut saltiness.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
  3. Blend in the honey and egg until well combined.
  4. Sift together the flour, baking powder, and salt, then slowly fold it into the wet mixture.
  5. Gently fold in the chopped pistachios until evenly distributed.
  6. Using a cookie scoop or tablespoon, drop rounded balls of dough onto a baking sheet lined with parchment paper, spacing them out.
  7. Right before baking, sprinkle the tops of the cookies with flaky sea salt.
Baking
  1. Bake for about 10-12 minutes until the edges are lightly golden.
  2. Let them cool on the tray for about 5 minutes before transferring to a wire rack.
