Preparation
- Cut the flank steak into strips about an inch thick, cutting against the grain for tenderness.
- Heat oil in a frying pan over medium heat. Add the sliced onions and cook for about 2 minutes until translucent, then add the minced garlic and cook for an additional 30 seconds.
Assemble
- In the slow cooker, add the steak strips, sliced peppers, sautéed onions, garlic, beef broth, soy sauce, and black pepper.
Cook
- Set your slow cooker to low for 6-8 hours or high for 3-4 hours.
Thicken Sauce
- Once cooked, mix cornstarch with a bit of cold water in a separate bowl. Stir it into the slow cooker about 30 minutes before serving to thicken the sauce.
