Ingredients
  

Chicken and Sauce
  • 500 g chicken breasts, diced Use organic when on sale.
  • 1 cup peanut butter Preferably smooth; crunchy for texture.
  • 1/4 cup soy sauce Low-sodium recommended.
  • 1/3 cup honey or maple syrup Enhances the flavor.
  • 2 cloves garlic, minced Increase to 3 if you love garlic.
  • 1/2 tsp ground ginger Fresh is always best.
  • 1 tsp red pepper flakes Optional, for those who like heat.
  • 1/2 cup chicken broth Homemade preferred, but stock cubes are fine.
  • 1 tbsp lime juice Adds brightness.
  • 2 spring onions chopped For garnish.

Method
 

Preparation
  1. Dice the chicken into bite-sized chunks.
  2. In a bowl, combine the peanut butter, soy sauce, honey, garlic, ginger, red pepper flakes, chicken broth, and lime juice until well blended.
  3. Combine the chicken and sauce in the slow cooker, and stir well.
Cooking
  1. Set your slow cooker on low for 6-8 hours or on high for 3-4 hours.
  2. Once done, shred the chicken with forks.
