S'mores Cookie Bars

These S'mores Cookie Bars are the perfect treat for chaotic days, combining gooey marshmallows, rich chocolate, and crushed graham crackers into a delicious dessert that brings comfort and joy.

Ingredients
  

For the Cookie Base
  • 1 cup butter, softened Softened for better incorporation.
  • 1 cup granulated sugar Essential for sweetness.
  • 1 cup brown sugar Adds moistness and flavor.
  • 2 large eggs Use fresh eggs for best results.
  • 1 teaspoon vanilla extract Add a bit more if desired.
  • 3 cups all-purpose flour Default flour works well.
  • 1 teaspoon baking soda Check expiration for best results.
  • 1 teaspoon salt Sea salt is preferred.
Mix-ins
  • 1 cup mini marshmallows These mix better than large marshmallows.
  • 1 cup chocolate chips Semi-sweet chocolate chips are recommended.
  • 1 cup crushed graham crackers Essential for S'mores flavor.
  • extra marshmallows and chocolate for topping To be added before finishing in the oven.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease your 9x13 pan or line it with parchment paper for easy removal later.
  2. In a large mixing bowl, cream together your softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  3. Add the eggs one at a time, followed by the vanilla extract. Mix until well combined.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the creamy mixture, stirring until just combined.
  5. Fold in the chocolate chips, mini marshmallows, and crushed graham crackers until evenly distributed.
Baking
  1. Spread the mixture evenly into your prepared pan. Bake for about 25-30 minutes, or until the edges are golden brown and a toothpick comes out clean (there should be some gooeyness).
  2. When the bars are almost done baking, sprinkle extra marshmallows and chocolate on top, and pop them back in for an additional 5 minutes until the marshmallows are golden.
Cooling and Serving
  1. Allow the cookie bars to cool in the pan before cutting into squares. Serve slightly warm.

Notes
