Ingredients
  

For the sushi base
  • 2 cups sushi rice Make extra for leftovers.
  • 2 tablespoons rice vinegar A bit more expensive but makes a big difference.
For the salmon filling
  • 1 pound fresh salmon Purchase from a fishmonger or a good grocery store.
  • 1 tablespoon sesame oil Adds a wonderful aroma.
For the spicy topping
  • 4 tablespoons mayonnaise Hellmann's is recommended.
  • 1 tablespoon sriracha Adjust to taste.
  • 4 pieces green onions, chopped Adds a nice crunch.
For serving
  • 1 sheet Nori sheets Great for wrapping the bake.
  • Soy sauce For drizzling.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Rinse the sushi rice in cold water until the water runs clear, then cook according to package instructions.
  3. While the rice is cooking, place the salmon on a baking sheet lined with parchment paper and drizzle with sesame oil.
  4. In a bowl, mix the mayonnaise, sriracha, and green onions until well combined.
Assembly and Cooking
  1. Once the rice is cooked, stir in the rice vinegar. Spread the rice in an even layer on a baking dish.
  2. Layer the salmon on top of the rice, followed by the spicy mayo mixture.
  3. Bake for 15-20 minutes until bubbling hot and slightly golden.
